6 hard-boiled eggs
1/4 cup mayonnaise
1 teaspoon Dijon mustard
1/4 teaspoon salt
1/8 teaspoon black pepper
2 teaspoons paprika (1 teaspoon for the filling, 1 teaspoon for garnish)
Chives, snipped, for the pumpkin stems
Directions
Prepare the Eggs: Carefully peel the hard-boiled eggs, keeping the whites as smooth as possible to look their pumpkin-best. Rinse and pat them dry with paper towels. Slice each egg in half lengthwise.
Create the Filling: Gently remove the yolks and transfer them to a small bowl. Mash the yolks with a fork until they are smooth without any large chunks.
Season and Fill: To the mashed yolks, add mayonnaise, Dijon mustard, salt and pepper, and 1 teaspoon of paprika. Mix until creamy. Use a round tip on a piping bag to pipe the yolk mixture into the egg white halves. If you don't have a piping bag, you can spoon the mixture in carefully.
